How To Make Our YogurtParfait Recipe
Make the cinnamonapples. Peel (optional) and cut applesinto ¼” slices. Melt butter in heavyskillet, add apples and cook over medium heat, stirring every so often, untilfork tender. About 6 minutes.
Dissolve cornstarch inwater, stir. Add to skillet along withbrown sugar, cinnamon and vanilla, stir.Bring to a boil and cook for about 2 minutes or until it becomes syrupy.
Remove from heat and addlemon juice. Again, lemon juice isoptional, it brings a brightness to the dish.
The cornstarch mixture isoptional, it helps make a thick syrup.
Stir yogurt untilsmooth. Scoop a little into the bottomof the cup. Top with some washedblueberries, raspberries and cinnamon apples.Top a bit with more yogurt and repeat.
Apples can be served warm orcold. I like the contrast of the hotapples with the cold yogurt.
How To Take Our YogurtParfait Recipe On-The-Go
Our yogurt parfait recipecan be kept at room temperature for up to 2 hours, then it should berefrigerated. If in a backpack put afreezer pack next to it.
If over 90 degrees thenrefrigerate within the hour.
Scoop into these adorableplastic cups. If you want to add granola,put in the top insert container so that the granola doesn’t get soggy.
Tape or hot glue a bamboo orbiodegradable plastic fork to the container. Or pack a metal spoon and bringhome after eating.
Plastic co*cktail glasses, mason jars, plastic cups with lids are all good containers for on-the-go eating.

How Long Can These YogurtParfaits Last In The Refrigerator?
Our yogurt parfait recipe, covered,will last about a week in the refrigerator.The fruit may start to “bleed” a bit but that’s fine. Some people think it looks prettier that way.
Can I Freeze This YogurtParfait Recipe?
Of course. You’ll need a freezer proof container with a lid. Or if freezing for a party you can put in see through plastic or paper cups without a lid if it’s just for a night.
Thaw in the refrigeratorovernight. Or pack in your lunchbox andit should be defrosted by noon.
Freeze up to 1 month, somesay 3 months and some even day up to a year.For safety sake any of these are fine.For texture sake, time does make a difference.
Ingredient Substitutions
Greek yogurt – that’s my preference but any yogurt will do. Flavor wise I think using plain yogurt or vanilla flavored works well with the fruit.
But as far as type of yogurt anything goes. Greek is thicker and tarter than most. That’s what I like about Greek yogurt, but that’s also what a lot of people don’t like about it.
Fruit – use your favorite. I love the combination of the fresh raspberries, blueberries and sweet cinnamon apples. But any fruit will do.

Is Your Yogurt ParfaitRecipe A High Protein Breakfast?
That depends on what kind of yogurt you use. I’ve made a list of yogurts from highest protein to lowest. This list is not by brand but rather a generalization of type of yogurt. Please understand that certain brands may vary in protein content from my list.
Personally, I prefer Greek for our yogurt parfait recipe, but if you are choosing on your own taste and protein value use our list below.
In general, the types ofyogurt below are representative of their protein content as an ounce for ouncecomparison.
Icelandic yogurt or quark = @ 14 grams
Greek or Asian = @ 12 grams
Traditional (what I think of as American) = @ 5 – 7 grams
Dairy free or Kids = @ 6 grams on an ounce to ounce basis. A lot of kid’s brands will only show about 2 grams but the serving size is also about a third of an adult serving.
French or Australian = @ 5 – 6 grams. I know, I know, these yogurts are soooo creamy and delicious, they just don’t carry the same protein value as other types.

Ingredients
- 1cupGreek yogurtor your favorite yogurt, plain or vanilla flavor
- 20wholeraspberries
- 20wholeblueberries
Cinnamon Apples
- 1largeapplegranny smith, gala and pink lady are good choices
- 1Tablespoonunsalted butter
- 1/2teaspooncornstarch, optional
- 2Tablespoons cold water
- 2Tablespoonsbrown sugar
- 1/2teaspooncinnamon
- 1/4teaspoonvanilla extract, optional
Instructions
Cinnamon Apples
Cut apples into ¼” slices, peeling is optional.
Heat skillet over medium heat, melt butter. Add apple slices. Cook, stirring often until fork tender, about 6 minutes.
Dissolve cornstarch and water, stir. Add mixture along with brown sugar, cinnamon and vanilla to skillet.
Bring to a boil and cook for about a minute.
Assemble Yogurt Parfait
Add ½ cup yogurt to bottom of glass, jar or bowl. Top with 4 raspberries and 4 blueberries and ¼ cup cinnamon apples. Repeat.
Top with 2 raspberries, 2 blueberries and an apple slice or two.Repeat for the second parfait.
Recipe Notes
Toppings: A nice touch is to sprinkle with cinnamon sugar. Or leave alone for those not wanting that extra sweetness…….that would be me. Mix about 3 Tablespoons sugar with 1 1/2 teaspoons cinnamon. Store in a cool place.

Time Saver – The cinnamon apples are delicious and can be made up to a week ahead of time. But if you are in a hurry just use the fresh berries and you can have this made in a few minutes.
